Eggs with Whole Grain Bread

In a small saucepan bring 1/2 inch water to boiling. Add eggs; reduce heat. Simmer, covered, 6 to 7 minutes. Pour off hot water; gently shake eggs in pan to crack shells. Fill pan with cold water; let stand 30 seconds. Peel and halve eggs.

Spoon spinach onto a plate and sprinkle with lemon juice. Top with eggs and sprinkle with chives and salt. Serve with bread for dipping.
